My friend Mary Beth was hosting a dinner party for her mom's birthday and ordered little jam favors for her guests. Above is an assortment of my summer jam flavors: blueberry lemon zest, peach basil, strawberry mint, raspberry blackberry, jalapeno peach, and raspberry sage. Happy Claire's Day!

Peach Jam with fresh Basil: The How To Edition

step 1: start with local seasonal peaches (these came my summer CSA, windflower farm in valley falls, new york) and organic sugar, which i find at my local organic market here)

step 2: wash peaches, remove pits, and slice into thin wedges (i left the skin on for this batch, but see first edition for peach jam without skin. boil peaches for a few minutes, place them in an ice bath, and skin peels right off).

step 3: add lemon juice and organic sugar. stir until sugar dissolves.

step 4: add fresh basil (mine is from my local CSA), cover, and let sit for four hours. smells really good.

step 5: cook the JAM. bring fruit to a boil and cook quickly to a jelling point, stirring frequently. once ready to jar, remove basil leaves.

step 6: ladle hot JAM into hot jars, leaving 1/4 inch at the top. remove air bubbles and adjust lids tightly. process in a hot water canner. let cool. style accordingly.

peach basil JAM goes especially well on sourdough toast, scones, and crackers with brie.

Jam Making Workshop at Poconos Wellness Retreat

Shannon Sodono (front center) is a nutritionist, yoga instructor, personal trainer, and a friend of mine. She organized a wellness retreat in the Poconos and invited me to lead a jam making workshop as part of the Preserving Summer segment. I was thrilled to say yes!

Before heading out of New York to Pocono Pines, I stoped at the Union Square farmer's market to pick up the ingredients. I love trying fruits from differnt local farms, so today I tried Migliorelli farm in Tivoli, NY.

Here is what I found: delicious organic strawberries.

Workshop begins: the only ingredients we need are berries, sugar, lemon juice.

The jam making workshop was a huge success. We also made strawberry syrup (goes nicely on waffles).

ta da! The finished jam jars with individual labels made by the participants.

First jam show! My two new friends, Kathy Jewel and Lisa Lloyd invited me to be a part of their annual holiday craft fair. They both hand make beautiful jewelry and host a sale every December. Day 1: I made a modest 25 jars of assorted flavors and hoped to sell one or two. I sold out in an hour. Day 2: I made another 25 jars and sold every one of those too. It was really exciting. I was even commissioned for a special order for 25 jars to give away as holiday gifts.

Just Peachy

What a season for peaches! For several weeks in a row, I picked up two to four pounds of freshly picked peaches from my local CSA. They were soft and fuzzy and smelled like pie even from the outside. Word got out about my peach inventory and shortly afterward, I received my first mail order to fill (thank you Caroline!).

Strawberry Basil Debut

The Jam Business is really coming together. I found the perfect size miniature jars and collaborated with Britt Browne (above) of The Paper Moon Project for my business card design. The cards are so fantastic, I just adore them. Britt, you are an amazing talent.

These jams were a special order for one of my colleagues. The strawberries were picked at Adam's Berry Farm in Burlington, Vermont.

9th street community garden brunch

my friend caroline and i hosted our second annual garden brunch this morning. the threat of a thunder storm had us crossing our fingers and planning a rain location up until minutes before our guests arrived. luckily, the new york city gods shared our vision to have a community meal under the trellis in the 9th street garden, so handed us sunshine instead. gracias! i woke up at 8 o'clock to make two flavors of homemade jam and a dozen biscuits for the table. after all guests were seated and we passed around bite size omelettes and bakery fresh croissants, i conducted my first focus group for the jam. Jam A and Jam B were clearly marked and friends were encouraged to rate the two flavors. four votes for Jam B, two votes for Jam A and one vote for both.

Jam A: sweet blackerry (berries purchased from nyc green market)

Jam B: peach basil (peaches from my local CSA - wildflower farm)

trials and tribulations: my first set back

I was commissioned for a special order. My first sale; I was excited. With the success from my blackberry basil creation, I chose sage to compliment the blackberries for this batch. Dressed in one of my jam-making sun dresses and singing along to magnetic fields, the delicious small of sweet berries filled my kitchen. I was following the recipe to a tee when I realized after the noted 10-12 minutes, my jam was not thickening as expected. I brought the jam back to a boil and tried again. Still seemed very thin to me. This is where my tribulation began. I added pectin. The jam quickly thickened and after passing the frozen plate test, I sterilized the jars and lids and spooned the jam to fill. I was so inspired by the sale, I designed the packaging, drafted an invoice and hand delivered the jam.

It wasn’t until two days later that I discovered my set back. I always keep a few jars of every order to test the shelf life. Saturday morning: I toasted a slice whole grain bread and popped open my newly created blackberry sage. While beautiful in color, I could barely stick a knife into the jam. It was so thick and sticky. Much too thick. I only added two tablespoons of pectin, but it was enough to ruin the batch. Lesson learned.

the second edition

my little sister devin came to new york for a visit and i took her to the green market in union square. i had not yet decided what flavor i was going to make for the second edition. part of my motto is using fresh local ingredients. so, i would wait until i saw what was fresh and available: raspberries, blackberries, basil and figs. i bought them all and headed back to the east village to create. devin sat on my bed frantically typing to meet her journalism deadline and i aproned-up and moseyed around my 2 by 2 kitchen making my second edition flavors: blackberry basil and rasberry fig.

after making peach bird, i found a new love. a love for homemade jam. what was next? plum bird. i bought an array of red and white plums and with a little heat, a little sugar and little technique, plum bird was born.

ta da! i finished my first batch. my sister's kitchen smelled like a fruit orchard in august and the jam was sweet and tangy at the same time. i canned and sealed the jam in these miniature jars and decided this size would be my signature packaging.

welcome to the kelly browne jam blog. this is the story of how my jam business began and how it is evolving. i shot the above photo the day i made my first batch. i returned to my sister's house after a weekend in santa barbara and decided i was going to start a small business: make homemade jams for people to slow down, share over breakfast, and enjoy with their coffee and tea. i called the first edition peach bird.
